I am sure you must be bored during the times of quarantine, bake this simple cake to go with tea in the evening. Sure, will be a surprise for your family. Though they say cakes are not calorie friendly but sometimes, it is ok to cheat the diet for a treat. I am sure you ‘ll love it. Baking is not only an art but a science and the results are amazing.
Ingredients:
Eggs – 3
Sugar – 1 cup
Vanilla extract – 1 tsp
Butter- 150 grams
Yogurt – 1 cup
Any fruit – 1.5 cups (berries preferably)
Baking powder – 1 tsp
Method:
Grease a baking tin well and line with parchment paper. Beat butter till creamy, add sugar and continue to beat till light and fluffy.
In a separate bowl beat eggs. Sieve flour and baking powder together to the beaten butter and sugar mix add eggs and flour alternating till the entire egg and flour are absorbed in the butter. Add vanilla essence
The batter will become thick. Now add yogurt and cut berries or chocolate chips. Mix well. Pour in the prepared tin and sprinkle the top with chopped berries.
Bake at 180 degrees Celsius for about 40 minutes or till testing skewer comes out clean. Cool a while and then cut into slices and serve
Tips: If berries aren’t available, use chocolate chips
Yogurt also causes aeration, so try not to add excessive baking powder
